"Quick Spanish Hamburger Soup"
Ingredients | | 1/4 | pound | beef, ground | | 1/4 | teaspoon | salt | | 1/4 | teaspoon | pepper | | 8 | oz | tomato sauce, can | | 1 | each | carrot, sliced | | 2 | oz | mushrooms, can, stems and pieces | | 2 | tablespoon | onion, chopped | | 2 | tablespoon | olives, pimento stuffed, sliced | | 1/2 | teaspoon | sugar | | 1/2 | cup | water | | 1/4 | cup | wine, dry, red | | 1 | | parmesan cheese, grated, optional | | | | | | Directions:
| In saucepan cook ground beef till browned; drain off fat. Stir in salt and pepper. Add tomato sauce, carrot, mushrooms, onion, olives, and sugar. Stir in water and wine. Cover; simmer for 30-35 minutes or till carrot is tender, stirring occasionally.
Sprinkle individual servings with parmesan cheese, if desired.
Makes 2 servings.
