"Sweet Potato Casserole"
Ingredients | | 3 | cup | potatoes, sweet, cooked, mashed | | 1/2 | cup | sugar | | 2 | each | eggs | | 1/4 | cup | butter, softened | | 1 | teaspoon | vanilla | | 1/4 | teaspoon | salt | | 1/4 | cup | margarine | | 1/2 | cup | sugar, brown | | 1/4 | cup | flour | | 1/2 | cup | pecans, chopped | | | | | | Directions:
| Mix first 6 ingredients together. Put in a 2 quart casserole. Melt butter or margarine in small saucepan, add brown sugar, flour and nuts. Stir well & sprinkle on top of potatoes. Bake uncovered 30 minutes in 350 degree oven.
You may add 1/2 ts each of cinnamon and nutmeg to first 6 ingredients. Hot or cold you will think you are eating dessert. Delicious!
