"Papaya Cucumber Salsa"
Ingredients | | 2 | cup | cucumber, english, unpeeled, finely diced | | 2 | cup | papaya, or mango, peeled, diced | | 2 | tablespoon | dill, fresh, chopped | | 2 | tablespoon | vinegar, white wine, or lime juice | | 1 | | pepper, to taste | | | | | | Directions:
| In bowl, combine cucumber, papaya, dill and vinegar. Season with pepper to taste. Salsa can be prepared up to one day in advance; drain liquid off before serving.
