"Quick Tacos"
Ingredients | | 2 | tablespoon | vegetable oil | | 1 | each | onion, chopped | | 1 | each | garlic, clove | | 2 | cup | chicken, cooked, chopped | | 2 | cup | tomato, puree | | 4 | oz | green chilies, can | | 1 | | salt and pepper | | 6 | each | corn tortillas | | 2 | cup | monterey jack cheese, shredded | | 1 | each | avocado, large, thinly sliced | | 1 | | hot salsa | | | | | | Directions:
| Saute onion and garlic until onion is translucent. Discard garlic. Add chicken, puree and chilies. Season with salt and pepper. Reduce heat and simmer 10 minutes. Spoon some chicken mixture into each shell. Fill each with some cheese, avocado, lettuce, and salsa.
